Cast iron rewards patience. A thick skillet takes time to preheat but changes temperature slowly, which helps maintain a strong sear when cold food enters the pan. Stainless steel is more responsive, especially when built with an aluminium or copper core. That responsiveness is useful when moving between a hard sear and a gentler finish.

Bare cast iron handles high heat, ovens and open-flame cooking well, but prolonged tomato, wine or citrus cooking can affect seasoning and flavour. Stainless steel is non-reactive and therefore handles pan sauces, braises and acidic ingredients without that concern.

Ownership and care

Cast iron needs drying and a thin protective film of oil. Rust is normally a maintenance problem rather than the end of the pan.
